Waveland Oyster Co. is rooted in over a century of Mathews family heritage in Deltaville, Virginia. Nestled on 4 acres along Jackson Creek where the Piankatank River meets the Chesapeake Bay, our farm thrives in waters with perfect salinity and tidal flow, producing oysters with a smooth, buttery brine and a bright finish.

Grant Mathews

Co-Founder & Party Captain

A lifelong maker and natural host, Grant brings a spirit of celebration to everything he does. His family has gathered on the same Chesapeake Bay property since 1907 - the place he first learned to sail, to shuck, and to appreciate life on the bay. After years in the corporate world, he traded the spreadsheets for saltwater, drawn to the hands-on work and community of oyster farming.

When he’s not farming oysters, you’ll probably find him hosting shows at @bellwether_garage, his DIY music venue in Church Hill. For Grant, life on the bay and music share the same rhythm - a mix of hard work, heart, and a reason to celebrate.

Tyler Simmons

A Northern Virginia native with roots in law enforcement and real estate, Tyler brings heart, hospitality, and a deep appreciation for good food to everything he does. Whether he’s behind the grill perfecting a recipe, or welcoming guests at a pop-up, Tyler embodies the Waveland spirit: honest work, fresh flavor, and good company.

When he’s not slinging oysters, you’ll likely find him enjoying a glass of wine with friends, family, and his dog, Bocelli. Because for him, it’s not just about oysters; it’s about bringing people together, one shuck at a time.
